Karrma Posted January 18, 2024 Posted January 18, 2024 Deep winter herbs in my garden. I just visited my little herb garden, after an unusually cold spell. Rosemary is the hardiest of the herbs that last all year. Arp, the most hardy of the rosemaries, is doing well, and my hands are so fragrant from just petting it. In winter, rosemary is good with apples, Swedish fruit soup, as well as the savory meats or potatoes. I replanted some Blue Tuscan rosemary several years ago, after I found it again, as it has a more delicate leaf, but this, my favorite of the Rosemaries, does not look happy. My sage will survive, but the fresh leaves are coming to an end, just a few stragglers until springtime. The winter savory is gone. Thyme has been getting scraggly over the past few years, and not sure it will make it through this winter. Parsley has reseeded and is growing well, surprisingly survived the deep cold, way colder than usual. In a few weeks, when Imbolc arrives and the pace of the day increases, shoots of sorrel will arrive, then tarragon and borage. What is dead above ground needs to rest, it is too early to prune back any blackened mint stalks, oregano, lemon balm or lemon verbena, echinacea. Birds are still feeding on the echinacea seedheads in my flower garden.
