It's a syncretic religion. Enslaved Africans hid their gods under the guise of Catholic saints. They had to.
Maman Brigitte does correspond to the Irish St. Brigid, from what I understand. This is St. Brigid:

Here is a more proper depiction of Maman Brigitte. Like her consort Baron Samedi, she's skeletal. She is also African:

So while it's not unheard of to depict the Loa as white, this was a cover. I doubt the people buying those prayer cards are in danger of being beaten or lynched. It's just more of that buffet-style new age religion that reimagines everything as whitewashed and pagan. You can make the jump from Maman Brigitte to St. Brigid. But when you take it all the way back to the Celtic Brighid (and imagine her all steampunky - ghaaa), it's not Maman any more.
